Fry 12-16 whole cloves of garlic in olive oil till just golden. Cook enough spaghetti for 2 people till just done and drain. Put half cup of strong chicken stock into the pasta pot and return the drained pasta on high heat and keep stirring till the pasta absorbs almost all of the stock. Turn off heat. Add the fried garlic cloves and their oil, add 4-6 finely chopped garlic cloves, a cup of chopped parsley, heaps of ground black pepper and stir till all mixed. Into bowls, plenty of freshly grated parmesan to put on top, bottle of muscly red wine.
